Michael is low-carbing these days, which often means that I cook two separate meals.  Sure, I can adapt some recipes so that we can all eat together or maybe he can eat some of the meal, but not the carb-rich parts.  There are, however, a few meals that we can all enjoy together.  This is one of them!

Broccoli Ham and Cheese Frittata

  1. 12 large eggs
  2. 1/2 cup of heavy cream
  3. 1 10-oz. bag of frozen seasoning blend (onions, celery, and bell peppers)
  4. 2 teaspoons of olive oil
  5. 1 pound of frozen chopped broccoli
  6. 1 cup of chopped ham
  7. 1 teaspoon of salt
  8. Nonstick cooking spray
  9. 1 cup of finely shredded Colby Jack cheese

Preheat the oven to 400 degrees.  Microwave broccoli in the bag on high for 5 minutes.  In a small skillet, saute the seasoning blend in olive oil.  In a large bowl, beat the eggs, cream, and salt.  Remove the broccoli from the bag and use a knife to chop the pieces smaller, if necessary.  Add the pieces and the sauteed seasoning blend to the egg mixture.  Combine well.  Spray a 9X13 baking pan with nonstick cooking spray and pour in the egg mixture.  Bake for 45 minutes.  Remove from the oven and immediately top evenly with shredded cheese.  Cut into squares and serve.
