Christopher went on a canoe trip with the youth from our church today.  He was so excited about it.  He packed his clothes last night.  He picked out what he wanted me to pack in his lunch.  He charged up a little Bluetooth speaker so they could listen to tunes from his phone while they paddled.  He was ready for a good time.

Around 11:14 this morning, I received a text message from him in the form of a video.  In the video, he was soaking wet.  He informed me that he and his partner had already capsized three times.  He lost the speaker the first time.  He lost his lunch when his entire ice chest floated away the next time they flipped.  But he seemed in good spirits and even told me he loved me.

I knew they were stopping somewhere along the way for lunch, so I waited a little while and then texted to ask him how things were going.  I didn’t get a response.  When my second text a little later wasn’t answered, I panicked a bit.  I called Michael, who was on his way back from working a claim out of state.  He assured me that everything was fine, but I was slightly (extremely) irrational.  In fact, I was freaking out.  I even tried the Find My iPhone app and it said it couldn’t locate his phone.  I tried calling and it went straight to voice mail.

While I prayed for his safety and prayed that he wasn’t hurt or worse (What can I say?  Sometimes I’m a drama mama!), I went into the kitchen to make something to keep my mind off of my worries.  I rooted through the pantry and refrigerator and found a few things that I thought I could use to make a dessert.

It worked!  Yummy, delicious, and dreamy.  This pie is easy and fantastic!

Creamy Dreamy Chocolate Pie

  • 1 8-ounce package of cream cheese, straight from the refrigerator
  • 1 cup of semi-sweet chocolate chips
  • 1 can of sweetened condensed milk
  • 1 16-ounce tub of Cool Whip
  • 1 Oreo pie crust

Open cream cheese and place into a large microwavable bowl.  Microwave on high for 1 minute.

Use a hand mixer to beat the warm cream cheese until smooth.  Beat in chocolate chips.  They will partially melt.  Microwave for 20 seconds more.  Beat again.  Chips should melt completely.  If not, microwave for another 20 seconds.  Beat until smooth.  Add the can of sweetened condensed milk and mix until combined.  Beat in Cool Whip and beat for 1-2 minutes until thickened.  Use a rubber spatula to scrape the sides and bottom and be sure that everything is combined.  Pour into the pie crust, cover, and chill for at least 2 hours.

Well Duh #1:  Someone had eaten a few spoonfuls of Cool Whip from the tub.  It still turned out okay.

Well Duh #2:  There really are no duhs on this one.  It’s a stupid-easy recipe that takes less than 5 minutes to make!

Just after I slid the pie into the refrigerator, my phone rang.  It was a number I didn’t recognize which scared me a little.  I answered and it was Christopher.  He had borrowed someone else’s phone to call me and let me know he was okay.

His phone?

Titanic-ed.

Yes, it had a completely water-proof case on it, but it didn’t float.  So it’s gone.

Considering how completely frightened I had been at the prospect of him being hurt or worse, my relief at hearing his voice made any irritation about the lost phone fade completely away.  He will go without a phone for a couple of weeks until he’s due for an upgrade, but he’s safe.

Completely burned like a lobster, but safe.

And right now, happily eating a slice of this pie!
