Will I ever catch up on our laundry?

Doubtful.

I call our laundry Mount Washmore.  And it rarely goes away.  I wash uniforms, towels, and underwear on a near-daily basis, but I can never seem to catch up with everything.  During the summer, I usually catch up and get everything washed.  Everybody says, “I forgot I had that shirt!” and “Wow, I only wore this once and it doesn’t fit anymore!”  And we have clean clothes and the laundry room has a visible floor.  And all is happy in the kingdom.

And then school starts.

I am pretty useless for the first two or three weeks of school.  I come home tired and cranky and just want to go to bed – which I can’t do because I have kids and a husband who expect to be fed and spoken to in civil tones.  I’m always grateful for the meals that I made and froze during the summer because they mean that I don’t have to cook dinner for roughly the first month of school.  I’m even more grateful for those few teachers who don’t assign homework for the first few days, because after I’ve spent all day trying to help kids get back in the groove of school, I really don’t have much left for my own family at the end of the day.

Wait.  Where was I going with this?

Oh, yeah.  Laundry.

After spending a week or two of only washing those clothes necessary for us all to survive, I can never seem to catch up on the laundry.  I tell myself that I’ll do it on the weekend, but then the weekend comes and either we have crazy-busy plans or I just lie around like third base and do nothing.

I’ve spent most of this weekend washing clothes.  I’m still not caught up, but I have lessened it to about four baskets full of clothes that need to be washed.  I know it’s sad.  I’ve just never been one of those people whose houses are always spotless.  I have one friend who is very OCD about her house being clean.  On most days, I know that if she were to come into my house unannounced, she would die in my doorway.  Seriously.  Dead friend.

I’m working on being better at cleaning house.  I really am.  But honestly, if I have to choose between wiping down baseboards or cooking something yummy, I’ll choose cooking.  It’s my thing.  It’s what I do.

I love recipes that come together really fast with a minimum of clean-up.  This is definitely one of those recipes.  Done in around 30 minutes and made in one skillet, it is delicious, easy, and clean up is a breeze!

Turkey Taco Rotini Skillet

  • 2 pounds of ground turkey, browned and drained
  • 2 packages of taco seasoning mix
  • 28-ounce can of crushed tomatoes
  • 15.25-ounce black beans, rinsed and drained
  • 2-pound box of chicken stock
  • 13.25-ounce box of whole wheat rotini
  • Salt to taste

After turkey is browned and drained, add the taco seasoning, tomatoes, black beans, and chicken stock.  Stir over high heat until the mixture comes to a boil.  Add the rotini and stir to combine.  Cover and reduce heat to simmer for 20-25 minutes – or until rotini is tender.

Well Duh #1:  We like to top it with sour cream and a sprinkle of cheese.  We usually use light sour cream and 2% cheese, but that’s up to you!

Well Duh #2:  You can use ground beef, chicken, or venison with this recipe.  I’ve even made it with half ground beef and half ground sausage.
