I’m always looking for quick, easy, delicious side dishes. This certainly fits the bill!
Asparagus Rice
- 4 cups of instant rice
- 4 cups of chicken stock
- 1 bunch of asparagus, cut into pea-sized pieces
- 1 teaspoon of garlic salt
- 4-6 tablespoons of butter, cut into slices
- 1 cup of grated Parmesan
Place rice, stock, garlic salt, and asparagus pieces into a microwave-safe bowl. Microwave on high for 10 minutes.
Remove from the microwave and add Parmesan and butter.
Well Duh #1: You may have to cook longer if there is still water in the bottom of the bowl after 10 minutes.
Well Duh #2: You can use water instead of stock.
Well Duh #3: You may have to add salt. I found it perfectly salty once I’d added the Parmesan.
This makes a perfect bed for just about any entree. Fish, chicken, or beef. I served it with Maple Mustard Chicken. We really loved it!
