It was a rainy, dreary afternoon.  Elizabeth and I watched t.v. – unfortunately for me it was her turn to choose, so we binge-watched Disney shows like Austin and Ally and Jessie.  I did control of the remote for a limited time and chose to watch the last Harry Potter movie.  I’ve seen it several times, but I still love it.  I will admit that there are worse ways to spend a rainy day.

I wanted to make some sort of sweet something, but really didn’t want to make it totally from scratch.  I came up with this dessert.  Since I started with a brownie mix, I’ll say that it is “half-scratch”!

Brownie Mix Bundt Cake

  • 1 18.3-ounce box of fudge brownie mix
  • 1 2.1-ounce package of sugar-free chocolate pudding mix
  • 4 large eggs, room temperature
  • 1 stick of butter, melted
  • 1 1/2 cups of plain Greek yogurt
  • 1 cup of semi sweet chocolate chips

Preheat the oven to 350 degrees.  Spray a bundt pan liberally with baking spray.

Mix together everything except the chocolate chips.  After everything is mixed, stir in the chocolate chips.  Spoon the batter into the sprayed pan, spreading it evenly.  Bake for 1 hour.

Cool in the pan for 15 minutes before inverting onto a cake plate.  Allow to cool completely.

While cake is cooling, make the ganache/glaze

  • 12 ounces of white chocolate, chopped
  • 1 cup of whipping cream

Place chocolate pieces into a bowl.  In a small saucepan, heat whipping cream over medium heat just until it bubbles.  Immediately pour over the chocolate.  Wait about 5 minutes and then stir until smooth.  Allow to cool completely.

When cake and glaze are cooled, spoon the glaze over the cake, allowing it to drip down the sides and into the middle. Sprinkle with chocolate chips.

Well Duh #1:  The texture of this dessert is somewhere between a cake and a brownie.  It’s pretty dense, but super-moist and yummy!

Well Duh #2:  If you want your glaze thicker, use less whipping cream.

We really enjoyed this dessert!  Not only is it yummy, it’s also really pretty!  Once the boys got home, Christopher grabbed a sliced and declared it “amazing.”
