Ahhh, comfort food! There’s just nothing like it. Fried chicken, chicken and dumplings, cheesy grits, creamy mashed potatoes, my Daddy’s fried deer steak. It’s funny how different foods are considered comfort foods by different people.
On a recent splurge day, I discovered my new favorite comfort food.
Breakfast is probably my favorite meal. I love grits and scrambled eggs and cheese toast and bacon and bacon and bacon. I also love biscuits and gravy. I usually make it with sausage gravy. This breakfast casserole has almost everything I love about breakfast in one dish.
Biscuits and Gravy Casserole with Sausage and Eggs
- 1 pound of ground sausage, crumbled, browned, and drained
- 2 cans of big biscuits (like Grands)
- 8 eggs
- 2 packages of peppered gravy mix
- salt and pepper
Preheat oven to 375 degrees.
While sausage is browning, cut each biscuit into quarters. Spray an 11X9 pan with nonstick spray and lay the biscuit pieces from one can in the bottom.
Beat the eggs in a medium bowl with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Pour eggs over biscuit pieces.
When sausage has been browned and drained, sprinkle the sausage crumbles over the eggs. Add the biscuit pieces from the second can, distributing evenly.
In the same skillet you used for the sausage, make the gravy according to package directions. When thickened, ladle the gravy over the top of the casserole, reserving some to add to the cooked servings.
Bake for 45 minutes to 1 hour – until biscuits are cooked through.
Cut into squares to serve, adding additional gravy, if desired.
Well Duh #1: You can absolutely make your own gravy. A milk-based gravy is best for this recipe. Add a couple of teaspoons of black pepper as the gravy cooks. I found this handy alternative:
Well Duh #2: As sometimes happens, after baking for 45 minutes, I cut into the middle of the casserole to find that the biscuits weren’t completely done. I just returned the dish the oven for 15 more minutes.
Well Duh #3: I served this with grits and fresh fruit.
This was well-loved by everyone in my family except Elizabeth, who has never cared for biscuits and gravy. She was worried that not liking biscuits and gravy might mean that she isn’t a true Southerner, but I assured her that all is well! Meanwhile, the rest of us LOVED this easy, delicious dish!
