Thank goodness, most of the unbearable, stifling heat seems to be leaving. Oh, it’s not gone. In Louisiana, we will still be suffering from the heat well into November. I can still remember the Halloween that Christopher nearly passed out while wearing a full-body sasquatch costume!
But the worst of it seems to be behind us for now.
Still, my family longs for cool dinners. And I long for easy ones!
A few posts back, I talked about grilling a LOT of chicken and that I planned to use it in a couple of different recipes. The first was a yummy salad! The second was this yummy dish!
I cut the cooled chicken into strips right after grilling it and stored it in a big ZipLoc in the fridge until later in the week. Then I spent some time prepping. I sliced roma tomatoes and cucumbers into really thin slices.
And got out all the ingredients that I needed. I had bought some curly lettuce (known in my grocery store as “green leaf lettuce). I also had the prepped veggies, the sliced chicken, some bottles Caesar dressing, and some freshly-shredded Parmesan.
On each big flour tortilla, I placed a leaf or two of lettuce and then began the piling process. Once I had everything on there, I drizzled on some Caesar dressing and I rolled/folded the tortilla like you would a burrito.
These are DELICIOUS!!
Grilled Chicken Caesar Salad Wraps
Ingredients:
- Burrito-sized flour tortillas
- Curly-leafed lettuce
- Grilled chicken, sliced
- Roma tomatoes, sliced
- Cucumbers, sliced
- Parmesan, freshly-grated
- Bottled Caesar dressing
Directions:
- Warm the tortillas slightly in the microwave to make them more pliable for rolling.
- Lay down a leaf or two or three of lettuce to act as a bed.
- Layer on the other ingredients: chicken, tomatoes, cucumbers.
- Drizzle with salad dressing.
- Top with Parmesan.
- Roll burrito-style to form the wrap.
- Cut into halves for serving.
Well Duh #1: Of course, you can change up the ingredients! I don’t like tomatoes on mine, so I made it without them. You can add or take away any of the ingredients according to your tastes!
Well Duh #2: I used WalMart-brand Caesar salad dressing. Use whatever you like. I use whatever’s cheapest!
Well Duh #3: Don’t know how to roll a burrito? There are tons of YouTube videos to show you how. Look one up!
Well Duh #4: Can’t find that pretty, curly lettuce? Use what you can find. Even spinach would work on these!
The tribe really loved these wraps! Elizabeth had a friend who is recovering from surgery and she even took one to her. She loved it, too!
I’m very blessed that my people love salads – which pretty much made this a sure thing!
