School started today. This marks my 22nd year teaching at my current school. Actually my 27th as a teacher overall. I really love the first few days of school. It’s exciting and everything is new.
But, Lord, I’m tired!
I’m so grateful that I chose a menu for this week that will be mostly made in the slow cooker. And in case I forget to load the slow cooker one morning, I have several casseroles stashed in the freezer!
This recipe is super easy and super delicious. And it’s a full meal. Chicken, potatoes, and green beans. I just opened a can a biscuits and cooked them and our meal was complete!
Easy Slow Cooker Chicken Dinner
Ingredients:
- 4 frozen chicken breasts
- 3 pounds of potatoes, cut into chunks
- 2 10-oz. bags of frozen green beans
- 1/2 stick of salted butter, melted
- 1 envelope of dry onion soup mix
Directions:
- Spray the bottom of your slow cooker or use a slow cooker liner.
- Lay chicken in the bottom.
- Add green beans to one side of the slow cooker.
- Add potato chunks to the other side of the slow cooker.
- Drizzle melted butter over everything.
- Sprinkle onion soup mix over everything.
- Stir the green bean side to combine.
- Stir the potato side to combine.
- Cook on low for 6-8 hours – or all day.
Well Duh #1: Using frozen breasts is important when cooking as long as you’re going to cook this.
Well Duh #2: I used red-skinned potatoes. I washed them well, but I didn’t peel them. Yukon Gold would also work well. If you want to use russetts, you’ll need to peel them.
Well Duh #3: As ALWAYS, taste the finished product and add salt to taste – if it needs it.
Well Duh #4: If you don’t need an all-day recipe, you can cook this on high for 4 hours. In that case, you can use fresh chicken breasts instead of frozen.
Well Duh #5: I actually cooked this on low for 10 hours! I had planned on Elizabeth switching it to warm after 8 hours, but she ended working later than usual, so I got home before she did! Cooking for this long did not make everything fall apart. Aside from that disgraceful asparagus, everything was cooked perfectly.
Well Duh #6: I couldn’t find the second bag of frozen green beans THAT I KNOW I BOUGHT! So I added a bag of frozen asparagus on top of the green beans that I had. I do NOT recommend this. Asparagus and slow cookers do not mix! The asparagus was limp and sad and gross.
Well Duh #7: After you have the food plated, you’ll probably want to sprinkle a little salt on top.
This was loved and eaten by the tribe! Honestly, I scooped the asparagus off and chunked it. It was gross. Next time, I’ll keep digging until I find that other bag of green beans!
I had a great first day of school today! It was great to be back with my kiddos! And it was even better since I thought all day about the fact that I wouldn’t have to make dinner when I got home!
