My mama made lots of wonderful candy at Christmas.  She spent hours making tons of it that she sent to my daddy’s work crew at the paper mill.  Needless to say, they all loved their supervisor!  She made peanut butter balls, mini muffins, cake balls, chocolate-covered pretzels, and lots of others.  She always made enough to keep some for us, too.

She’s a master at those candies, so I’m not about to try any of them!  I have other candies and treats that I make and leave the hard stuff to Mama!

I had a couple of friends whose moms made this easy candy when we were growing up.  I always loved it because I’m a sucker for the whole salty-sweet thing!

Haystacks

  • 2 cups of butterscotch chips
  • 1 cup of peanut butter
  • 1 cup of dry roasted, salted peanut
  • 4 cups of chow mein noodles.

Microwave the butterscotch chips and peanut butter at 50% power for 3-5 minutes, stirring after 3 minutes, until completely melted and smooth.  Add peanuts and noodles. and stir to coat.  Drop by spoonfuls onto waxed paper and cool completely.

Well Duh #1:  Once the chips and peanut butter are melted, work quickly!

Well Duh #2:  Please don’t be insulted when I say this:  don’t cook the noodles before using them.  Honestly.  You’d be surprised.

Well Duh #3:  Have your peanuts and noodles measured and ready to go before you start.  Also have the waxed paper laid out.

Well Duh #4:  HIDE THEM!  Seriously.  I’ve had to get creative with my hiding places this Christmas!  My kids just come through like locusts and eat whatever’s in the kitchen!

These are easy, sweet, salty, creamy, crunchy, and perfect!
