I love taking a traditional recipe and twisting it up a little!  My kids love Rice Krispies Treats.  I do, too.  They’re just a really simple, yummy treat.

But wait until you have these!

Rock Star Rice Krispies Treats

  • 3 tablespoons of butter, melted in the microwave in a large bowl
  • 1 10-ounce bag of marshmallows
  • 5 1/2 cups of Rice Krispies cereal
  • 1 cup of salted cashews
  • 2 cups of M&M’s (I used 1 cup of peanut butter M&M’s and 1 cup of pretzel M&M’s)
  • 1 bag of milk chocolate chips

In a separate bowl, combine the nuts and M&M’s and stir to combine.  Add marshmallows to melted butter and stir to coat.  Microwave for two minutes and stir.  Microwave for one more minute and stir until smooth.  Quickly add the cereal and stir until coated.  Pour in nuts and M&M’s all at once and stir.  Pour into a 9X13 baking dish and use an empty butter wrapper (or give your hands a quick spray of cooking spray) and press the mixture firmly into the pan.  Let the pan sit on the counter for about 30 minutes before cutting the treats into squares of your desired size.

Melt the chocolate chips in the microwave on high for 1 minute in a microwave-safe bowl.  Stir and return to the microwave, removing and stirring every 30 seconds until smooth.  Dip the tops of the treats into the melted chocolate and then place on waxed paper for a few minutes to harden.

Well Duh #1:  You can use any kind of candy you like, but remember that if it’s chocolate, it will melt since the mixture will still be warm.  That’s why I always use M&M’s.

Well Duh #2:  You can dip these any way you like:  tops, bottoms, half – whatever!  Or you can skip the dipping altogether!  They’re yours!

I went out to take pictures of these and when I returned to the kitchen, several had already disappeared.  Nobody fessed up, but there was chocolate on quite a few fingers.  In fact, there may or may not have been a little chocolate on my camera!
