I wrote a really amusing and clever blog post to go with this recipe, but something funky happened to my computer and I lost it.

Ticks me off.

It was really good!  It could have changed lives.  It could have made you laugh and forget about your troubles.  It could have miraculously healed your sick hamster.

It took me over an hour to write it!!

Oh, well.  I’ll just take that as a sign that I was oversharing (again) or that I said something that would embarrass one or more family members (again).

Anyway.  Here’s the dang recipe!

Slow Cooker Orange Chicken

  • 6 large chicken breasts, cut into big bite-sized chunks
  • 2 cups of orange marmalade
  • 1 cup of honey barbecue sauce
  • 1/4 cup of soy sauce
  • 2 teaspoons of sesame oil

Place chicken pieces into the slow cooker.  In a large bowl, whisk together the other ingredients and pour over the chicken.  Cook on low for 5-6 hours.  Serve ovr fried rice.

Easy Fried Rice

  • 2 teaspoons of sesame oil
  • 1 medium onion, diced small
  • 1 cup of shredded carrots
  • 1 cup of frozen green peas
  • 3 eggs, beaten
  • 6 cups of cooked white rice
  • 1/2 cup of soy sauce (or more)
  • 2 teaspoons of sesame oil

In a large skillet, drizzle oil and add onion and carrots.  Cook over high heat until onions are tender.  Add frozen peas and cook for 2-3 minutes.  Push vegetables out to the edges of the skillet and pour eggs into the middle.  Scramble the eggs until done and mix into the other ingredients.  Add the rice, soy sauce, and additional sesame oil.  Mix thoroughly.  Add more soy sauce, if you like.  Let the mixture sit for a few minutes to really fry the rice.  Stir and let it set again.  Repeat until rice is as done as you like it.

Well Duh #1:  If you want more of a glaze over your chicken, just turn the heat to high and stir in a slurry made of 1/2 cup of water and 2-3 tablespoons of cornstarch.  Cook for 10-15 minutes until sauce thickens.  I would have done this, but my people were hungry and had no patience for slurries.  I also didn’t get to garnish with sesame seeds and sliced green onions.  In fact, I snapped the second picture and someone dragged the beauty plate right out from under my nose and started inhaling it!

Well Duh #2:  I had a yearbook meeting after school and didn’t get home until 5.  That means that my chicken cooked for NINE hours.  It was okay, but it was much darker than it would have been if it cooked less.

Well Duh #3:  There are oodles of recipes for fried rice.  Get your Google on and find another one, if mine doesn’t blow your skirt up.  It won’t hurt my feelings!  Mine is quick, easy, and my tribe devoured every single grain of rice from that skillet, so I think I’ll keep using it!

Next time, I will likely make this on a Saturday or Sunday so I can control the cooking time.  Then I can just freeze or refrigerate it until I’m ready to serve it!  But either way, my tribe loved this dish!
