You know a recipe is a family favorite when you actually have pictures of your family making it.  I have been making these roll-ups for a very long time.

These pictures were taken when Christopher was seven and Elizabeth was three – just before we moved into the house we’re in now.  They have always loved to come into the kitchen with me to stir and make things.  I can remember handing Elizabeth a bowl and a whisk to stir muffin batter.  She was so little that she had to put the bowl on the floor and sit down to stir it!  But she loved it!  Christopher has been helping me in the kitchen since he was two or three.

So you can see why this recipe is special to me.  This is the dish they both were stirring in the pictures above.  And the third picture is of them actually assembling the roll-ups.

It’s a very easy dish, but delicious enough that we still love it – almost 8 years later!

Chicken and Cheese Roll-Ups

  • 12.5-oz. can of chunk chicken breast, drained and crumbled
  • 2 cups of finely-shredded cheddar cheese
  • 3 tubes of crescent rolls
  • 26-oz. can of cream of chicken soup
  • 1/2 cup of water

Preheat the oven to 375 degrees.

Spray a 9X13 baking dish with nonstick spray.  In a bowl, mix the chicken and cheese together.  Unroll the crescents and separate the triangles.  Press about 2 tablespoons of the chicken and cheese mixture onto each triangle and then roll up as usual.  Place the rolled crescents into the baking dish, making sure to place them snugly against each other.  Continue to roll until you’ve used all the crescents.

In the same bowl, combine the soup and water, whisking until smooth.  Pour soup mixture evenly over the crescents and bake for 45 minutes.

Well Duh #1:  You’ll need the large, family-sized can of soup.

Well Duh #2:  When I freeze these, I cook them completely, let them cool. and then freeze.  I’m just not sure how the crescent roll dough would do after being frozen.  Dough is funny like that.  It might actually do great, but I’ve never tried it.

Well Duh #3:  This recipe makes a lot of crescents – 24! Luckily, they are awesome as leftovers.

Michael and Elizabeth were thrilled that we were having this dish today.

Christopher is currently going through a “I don’t want what you’re cooking.  I don’t even want to know what it is.  I’ll make something for myself.” stage.  Whatever.  I’m only making one meal.  If he wants something else, he can certainly make it himself!  He’ll come back around in a couple of weeks.  And chances are, he’ll ask for this!
