Teenage boys – do they ever stop eating? I swear The Boy can eat 24/7! And it’s not all bad stuff. He actually enjoys popcorn, carrots and hummus, fruit, and pretzels. But he eats ALL THE TIME! He’s a growing boy. And he works out every day for at least two hours. He’s been involved in a strength and conditioning camp all summer and they work out intensely OUTSIDE! In Louisiana, outside in the summer is not fun – unless you’re floating in a pool. And even then, it’s HOT! So when he comes home after a workout, he is tired, he is sweaty, he is filthy, and he is HUNGRY! So while he hits the shower, I try to make him a snack that will tide him over until dinner.
Both of my kids adore these pepperoni poppers! They are so good – and better yet, they are SO easy! They’re also very versatile. The recipe and the picture are pepperoni and Colby Jack, but you can vary the filling ingredients in tons of ways! I’ve made them with shredded turkey and Swiss, ham and cheddar, hummus and shredded chicken…I’ve even spread them with cream cheese and topped them with finely-chopped vegetables before rolling them up! They are yummy and just the right size for popping into hungry mouths!
You’re seriously going to thank me for this recipe. If you have kids, they’ll thank YOU! Go ahead. Take all the credit. I don’t mind at all!
Pepperoni Crescent Poppers
- 2 cans of crescent rolls
- ½ cup of chopped pepperoni
- ½ cup of finely- shredded Colby Jack Preheat oven to 350 º
Unroll crescent roll dough and separate into rectangles – leaving 2 triangles connected and pressing their seams together. Sprinkle the cheese and pepperoni evenly onto the dough and press it slightly into the dough. Roll each rectangle tightly, jellyroll style. Refrigerate for at least 1 hour. Remove from the refrigerator and slice each roll into 6 pinwheels. Place pinwheels in an ungreased cookie sheet and bake for 15 minutes or until golden. Serve warm with marinara for dipping sauce.
Back away from the poppers quickly or you will be mowed down by the people running to grab them!
