Michael had to leave last night to work out of town, so I had to do everything by myself this morning. Single parents: I don’t know how you do it! You deserve a medal. A trophy. A vacation! You have my respect and my prayers!
I woke up early and did my morning thing – Brees, breakfast, and breathe-time. I woke Christopher early because he had a meeting before school. I went to wake Elizabeth – a task I would not wish on anyone! – telling her that I didn’t have time for her usual nonsense because we had to leave early. I may or may not have made monkey noises while tickling her. I went to pack lunches and roll the trash can down to the curb. We gathered up the contents of Elizabeth’s binder – which seemed to have exploded all over the sofa – grabbed lunches, her backpack, my tote, her glasses, his clothes to change into after practice, and we finally left the house.
His FCA meeting started at 7:30. He exited the car at 7:29. And a half. Elizabeth and I went to school and I made this week’s hall bulletin board stuff. A day late. Every week, I post each grade level’s art for the week so the kids can see what they’ll be doing in class. The bell rang and she went to class. Soon my day started. Art with 6 different grade levels can be exhausting and this week’s projects are especially involved, so that makes for a long day! I had duty after school and then we came home. We will do as much homework as possible before leaving to pick up Christopher and several of his friends (I don’t know how many yet!) from football practice. Elizabeth and the boys will head to church for Wednesday night activities. This is when I usually make my middle-of-the-week grocery store run, but not tonight. Christopher will be singing for the first time in the Praise Team at The Gathering – the student worship service – so I will stay and hear him. There may or may not be a video camera involved. Okay, there will be a video camera involved because Michael doesn’t want to miss this! I will take the boys home and then we will come home, eat dinner, and finish homework. Whew!
Have I mentioned that I love my crock pot?
This morning, I put dinner in the crock pot. I just switched it over to “heat” because it’s done, but we will wait to eat together tonight. My kids love this soup! So easy, it really shouldn’t be called a recipe!
Vegetable Tortellini Soup
- 64-ounce bottle of V8 juice
- 2 packages of taco seasoning
- 2-pound package of frozen mixed vegetables
- 2 19-ounce bags of frozen cheese tortellini
Combine V8 juice, taco seasoning, and vegetables in your crock pot. Cook on low all day. When you come home, add the frozen tortellini and cook for 30 minutes.

Well Duh #1: Before adding the tortellini, taste the soup to see if you need to add salt. It will be easier to stir it in before you add the tortellini.
Well Duh #2: Choose whatever mixed vegetables your family prefers.
