You know, there are just days when you don’t feel like cooking.  Even though I’m out of school for summer, there are times when I’ve spent the whole day cleaning or running errands and I just don’t want to spend a long time in the kitchen.

That’s where skillet meals come in.

Not only are they quick – most take 20-30 minutes from start to finish – they also make clean-up easy because they only use one pan!

I have several of these quick and easy dinners that my family loves.  One-Pan Pasta with Meat Sauce15-Minute Skillet SupperPower Protein BowlsSouthwestern Chicken Skillet.  If I can make in one pan and make it quickly, I do it!

This week, as I was searching the pantry for inspiration, I saw a couple of boxes of long grain and wild rice way in the back.  I love that stuff!  So I decided to incorporate it into a skillet meal.

Rich and hearty, savory and delicious.  This one was a one-pan wonder that I will definitely make again!

Turkey and Wild Rice Skillet

  • 2-3 pounds of ground turkey
  • 1 packet of dry Ranch dressing mix
  • 1 envelope of onion soup mix
  • 2 6.2-ounce boxes of Uncle Ben’s Long Grain and Wild Rice (Fast Cook Recipe)
  • 3 1/2 cups of stock or water

In a large skillet, crumble the ground meat and brown over high heat.  When meat is completely browned, add Ranch dressing mix, onion soup mix, rice mix, and stock or water.  Bring to a boil, cover and lower heat to simmer for 5 minutes.  After five minutes, turn off the heat, leave the dish covered, and let it sit for 5-10 minutes before serving.

Well Duh #1:  You can use any type of ground meat you prefer.  Turkey, beef, chicken, venison.  Just be sure to drain off any grease that may be in the pan after browning.

Well Duh #2:  I used beef stock as my cooking liquid because that’s what I had.  You can use chicken stock instead or just plain water.

Well Duh #3:  If your skillet doesn’t have a lid, you can use a pizza pan instead.

Well Duh #4:  I used 3 pounds of ground turkey because we are a family of carnivores.  You can reduce the amount, if you’d like.

Score!  This was done in 15 minutes and tasted so good!

Easy and delicious – my favorite combination!
