Don’t let the recipe title throw you off. This stuff is delicious!

When my kids were younger, I started making this bread. Basically, anything we had for dinner the night before got chopped up and rolled into a pizza crust and baked. Broccoli and cheese? Yep! Chicken fajitas? You betcha! Roasted veggies? Aw, yeah!

One day, I had made it and sliced it and put it on plates and one of my kids asked, “So you can just put any old garbage out of the fridge in bread?”

Not exactly. But the name stuck.

It just a really easy thing to make. I try to keep a couple of tubes of refrigerated pizza dough in the fridge because you can use it for so much. I’ve even made cinnamon rolls with it.

And it’s totally vegan!

A couple of days ago, I didn’t feel like cooking lunch, but it had to be done. I looked in the refrigerator and saw that I had a couple of tubes of pizza dough and decided to bring back a classic.

Garbage bread, here we come!

I had a carton of sliced mushrooms, a yellow bell pepper, and half a bag of frozen chopped onions. Sounded like the perfect beginning!

I cooked them in a little olive oil with a little salt and a few seasonings until all the moisture was gone.

I opened a tube of pizza dough and pressed it out into a rectangle. Then I took my itty bitty mini-rolling pin and rolled it out a little more.

The rolling pin is only a foot long. My chubby little hand is there as a size reference. It’s perfect for small rolling jobs. You can find it here: for like $9. I use mine all the time!

Next I laid some Chao cheese on the bottom half of the dough.

Chao is a great vegan cheese to use because it’s very melty and creamy. Perfect for this dish because it’s sort of the glue.

Next pour about half the mushroom mixture onto the cheese.

Starting at the cheese end, roll up the dough tightly.

Then tuck the ends under and place the roll seam-size down onto a baking sheet. Repeat with the second tube of dough, more cheese, and the rest of the mushroom mixture.

Then bake them!

When it’s done, take the loaves off the baking pan and let them rest and cool for 5-10 minutes before slicing.

Look at that yummy, mushroomy, oniony, cheesy goodness!

And I served the slices with a little pizza sauce or marinara.

This is such an easy, fast, delicious thing to make for a quick lunch or light dinner!

Vegan Garbage Bread

  • 2 tubes of refrigerated pizza dough
  • 8 oz. of sliced white mushrooms
  • 1 yellow bell pepper, chopped pretty fine
  • 1 cup of chopped onion
  • 1 teaspoon of salt
  • 1 teaspoon of Italian seasoning
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of garlic powder
  • 12 slices of Chao cheese

Preheat oven to 400 degrees.

Prepare a large baking pan with baking spray or a silicone baking mat.

In a skillet, drizzle olive oil and add mushrooms, pepper, onions, and salt. Saute for five minutes and then add other seasonings. Saute until vegetables are tender and most moisture is gone. Remove from heat and set aside.

Open one tube of dough and press out into a large rectangle. Use your fingers or a rolling pin to roll out a little bigger.

Lay six pieces of Chao cheese, slightly overlapping as shown in the picture above. Spoon half of the mushroom mixture onto the cheese.

Starting at the cheese end, roll dough up tightly, encasing the cheese and mushrooms inside. Tuck the ends under and lay seam-side down onto the prepared baking sheet.

Repeat with the second tube of dough.

Bake for 25 minutes until dough is dark, golden brown.

Remove from the pan and allow to cool for 5-10 minutes before slicing.

Well Duh #1: You can pretty much use anything as the filling, as long as it’s already cooked. Cheese is a good glue for whatever you use.

Well Duh #2: No rolling pin? No problem! You can use a bottle, a can or even a glass.

We all love this meal! The cheese makes it so creamy. The mushrooms and onions are savory and delicious. The bread is…well, it’s bread. I love bread.

I slice each loaf in half and then slice each half into 5 pieces. Everybody get a half.
