This healthy-eating thing is really becoming a way a life for us.  Lean protein, lots of veggies, whole grains, low-fat, low-calorie.  I’ve made little changes like swapping non-fat Greek yogurt for sour cream and using baking spray for most cooking instead of oil.  It’s not always easy, but it’s always worth it.

It’s especially not easy when you have a serious sweet tooth.  So Elizabeth and I worked together today to create a yummy, sweet snack that we can indulge in without feeling guilty.  She had seen a similar recipe on t.v., but she wanted to change a couple of ingredients to suit us better.

These little balls of perfection are delicious.  And while they are not technically a truffle (traditional truffles contain chocolate), they are technically wonderful!

Coconut Almond Date Truffles

  • 1/2 cup of unsweetened coconut flakes
  • 2 cups of chopped, pitted dates
  • 1/2 cup of almonds (I chose dry roasted, salted almonds)
  • 1 teaspoon of vanilla

Use a food processor to finely chop coconut flakes.  Pour into a bowl.

Add about half of the coconut back into the food processor.  Add the dates and almonds and pulse until the mixture starts to combine.  Then process the mixture.  Add the vanilla and continue to process until mixture forms a ball.

Use a spoon to scoop out a small amount of the mixture.  Use your hands to roll the scoop into a ball.  Roll in chopped coconut.  Place on waxed paper.  Continue until all of the mixture is gone.

Well Duh #1:  This makes about 25 small truffles.

Well Duh #2:  You will think that nothing is happening inside the food processor until you add the vanilla.  Then the mixture magically does its thing!

Well Duh #3:  You will also think that there’s no way that little amount of coconut is going to coat all the truffles.  It will.  You aren’t really trying to completely coat them.  Just roll them and keep going.

Well Duh #4:  Store these in an airtight container for up to a week – if they last that long!

These are awe-inspiring!  The perfect amount of sweetness without guilt.  Even though the recipe only made 25, that was fine because the truffles are rich and you won’t be able to eat a bunch of them!

I am told by my friend Loren that they are also Paleo-friendly, so if you’re eating Paleo, these would be a great treat!
