There are few dishes that take me back to my childhood like Beef Tips and Gravy.  Not only do I remember my grandmother making this, it was also one of my favorite meals from the school cafeteria.

Elizabeth doesn’t really like beef.  Or pork.  Or chicken.  Or any kind of meat that has any kind of fat on it.  So a dish like this – that is basically cooked until all of the connective tissue is gone – is something she really enjoys.

It’s really easy to make and tastes delicious!  This is a perfect Sunday evening meal for us.  I put it on early in the morning and we had it for dinner that night.

Beef Tips and Gravy

  • 5 pounds of beef stew meat
  • 1 can of cream of mushroom soup
  • 2 packages of brown gravy mix (the one that makes 1 cup of gravy)
  • 1/2 cup of dehydrated minced onion
  • 1 tablespoon of beef bouillon granules
  • 1 cup of water
  • 2 teaspoons of salt

Combine all ingredients in a crock pot and cook on low all day (7-9 hours).  Serve warm over rice.

Well Duh #1:  Michael likes this over mashed potatoes.  Equally yummy!

Well Duh #2:  You can use brown rice or white rice.  Whichever you prefer.

I had planned to put about half of this in the refrigerator for leftovers, but there was NONE left!  Seriously.  None!  Oh, well.  At least they enjoyed it!
